DUSTED MATCHA PANCAKES WITH MATCHA SYRUP

approximately 6 to 8 medium-sized matcha pancakes

**Ingredients:**

- 1 cup all-purpose flour

- 2 tablespoons sugar

- 1 tablespoon matcha powder

- 1 teaspoon baking powder

- 1/2 teaspoon baking soda

- 1/4 teaspoon salt

- 1 cup milk (or milk of your choice)

- 1 egg

- 2 tablespoons melted butter (or coconut oil)

- 1 teaspoon vanilla extract

**For Matcha Syrup:**

- 1/2 cup maple syrup

- 1 teaspoon matcha powder ( you can try our Yame matcha)

**Toppings:**

- Whipped cream

- Matcha dust (optional)

- Icing sugar (optional)

**Instructions:**

1. In a mixing bowl, whisk together the flour, sugar, matcha powder, baking powder, baking soda, and salt.

2. In a separate bowl, whisk together the milk, egg, melted butter , and vanilla extract.

3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

4. Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.

5. Pour 1/4 cup portions of the pancake batter onto the skillet for each pancake. Cook until you see bubbles forming on the surface, then flip and cook until the other side is golden brown.

6. While the pancakes are cooking, prepare the Matcha Syrup. In a small saucepan, warm the maple syrup over low heat. Whisk in the matcha powder until well combined. Remove from heat.

7. Once the pancakes are done, stack them on a plate. Drizzle the Matcha Syrup over the top.

8. Add a dollop of whipped cream

9. Optionally, dust the pancakes with extra matcha powder and icing sugar for added flavor and presentation.

10. If desired, top your matcha pancakes with fresh berries for a burst of fruity goodness.

11. Serve your Matcha Pancakes warm and enjoy!
